Healing herbs are only automatically attached if you have none left and collect some in the forest. This is to ensure that you automatically help knights when you yourself are in the forest and find or get healing herbs. If you don't want to heal, you simply put the herb down - as long as you have some and it is put down, it will not be automatically put back on.
